He played college football for the UCF Knights and was selected by the Jacksonville Jaguars in the third round of the 2007 NFL draft.
Sims-Walker also played in the NFL for the St. Louis Rams and in the Canadian Football League (CFL) for the Winnipeg Blue Bombers.
Sims-Walker played college football at the University of Central Florida, where he was a teammate of fellow NFL receiver Brandon Marshall.
During his junior year, he played exclusively as wide receiver and ranked second on the team with 64 receptions for 855 yards and 9 touchdowns.
