Triolein (glyceryl trioleate) is a symmetrical triglyceride derived from glycerol and three units of the unsaturated fatty acid oleic acid.
Most triglycerides are unsymmetrical, being derived from mixtures of fatty acids.
Triolein represents 4–30% of olive oil.
